Pizza Chicken

Pizza Chicken. Two words that sound weird when they are combined. But you know what? They taste so well together!

I found this recipe on Pinterest the other day and had to try it. I could live for pizza, chocolate and tacos. The world could spin in circles for me on those! I did a little twist to the recipe and forgot to take a photo, so photo credit to this blog.



Recipe: Pizza Chicken

Ingredients:
Chicken breast (at least two)
Pizza sauce (varies on how much chicken you have)
Pepperoni
Cheese
Italian seasoning
*Leave cheese out to keep it dairy free.

To Bake:
Preheat oven to 425 degrees.

Split chicken breast down the middle. Stuff chicken with pizza sauce, pepperonis and cheese (amounts of your choosing). Top with italian seasoning. You can also top with additional cheese and pepperoni if desired (I did!).

Bake for 40 to 45 minutes. Then enjoy!


It had so much flavor and was cooked perfectly. Even the husband enjoyed it! I think it will also become a staple in our house. It is a healthier alternative to actual pizza, and we all know I love pizza. It also saves me the struggle of attempting to make cauliflower crust or any other weird crust I find on Pinterest.

New Tattoo.

Hello lovelies!

I am back off the workout schedule for 2 weeks thanks to the new tattoo.

My beautiful new 1/4 sleeve tattoo! I love art, especially body art. It stays with the person forever and each usually holds a great story. This one, I had just an idea of what I wanted. I wanted flowers, and one had to be a dandelion (I know that is a weed). I have always also loved the idea of geometric. There are so many sides, twists and turns to geometric that it speaks volume. So, when my tattoo artist chose both of these, I was really excited. And you know what? It is beautiful! Let me share....

Isn't it a beauty? I love the touch of color. I gave him full reigns of this and it so perfect. My favorite part is the dandelion. Why did I request a dandelion? One of my best friends growing up, Shannasey, passed away in a car accident February 7th, 2015. This is for her. For some reason, I felt that a dandelion fits. Reminds me of when we were children wishing on these "wishing flowers" (thank you Leah K for that great name of the flower/weed). Reminds me of a time life was simpler and we were all together. I miss her dearly and I hope she is caring out some amazing wishes in Heaven right now. So thank you Mike, for doing one heck of a job and having an amazing vision.

I hope Shan can view this from Heaven as she has always been admirer of tats & I hope she approves! Love and miss you daily.

Sunday FUN-Day!

It is my last Sunday free until classes begin. I have spent it with my pups and catching up on Hulu with the husband. And when it is all said and done, that is what I do every Sunday. Sunday is for family and fun. It is a time to relax and get your mind right before the week begins. Sunday is a time to renew your soul so you can focus on your week.

Spending time with my pups allows me to love on them for one full day.
Catching up on Hulu with my husband allows me to do something with him we enjoy.

I am looking forward to this week actually. I am excited to start on my research and marketing project with TTUHSC Career Center and getting back to the gym. I need my healthy path and to get my knee back to better. We did yard work yesterday and my body is sore today. It is a good feeling to have, but the knee definitely needs some work. I don't want to have surgery if I don't have to, so my goal before my next appointment on the 27th is to strengthen it up. I have 3 weeks to accomplish this. I have 2 months to start and finish my final project. This summer is going to be filled with a lot of dedication and hard work but it will be fantastic.
